Glasspar just celebrated its first year in business. Having navigated a year unlike any other, Chef-owner Rob Wilson now enters into his second year with renewed optimism as he introduces a new seasonal menu, specialty holiday cocktails, and a reimagined seafood market.
The modern American seafood hall debuts a new menu of comforting classics brought to life with seasonal ingredients. Standout seafood dishes include Seared Nordic Salmon with melted leeks, squid ink gnocchi, and saffron sauce; Day Boat Scallops with parsnip puree, and Seared Ahi Tuna with madras curry couscous and star anise carrot puree. The ‘Certified Land' section of its menu sees new additions, including a 48hr slow-cooked short rib and a 20oz prime ribeye with bone marrow gratin.
During the month of December, Glasspar will offer a celebratory special in honor of their first anniversary - Champagne, Caviar, & Oysters 3 Ways. Priced at $36, the special includes a glass of Taittinger, an iced Tito’s Vodka & Caviar Shooter with pickled pearled onions and chives; Kumiai oysters from Baja California with local uni, caviar, and aguachile; and a Fanny Bay oysters with a champagne granita and caviar.
The new winter menu also sees the introduction of a holiday cocktail lineup with festive drinks like Miracle on Golden Lantern, Son of a Nutcracker, and Santa’s Little Helper, which offer a taste of the season with housemade cinnamon syrup, allspice dram, and pomegranate. Patrons can help Glasspar give back with each order of It’s a Wonderful Cosmopolitan - an elevated take on the classic cocktail prepared tableside from the restaurant’s custom bar cart.
Cointreau will donate $1 for every drink sold to Independent Restaurant Coalition - an organization fighting to save restaurants from the devastating economic effects of Covid-19.
During the mandated dine-in closure, Glasspar opened its doors to the community as a resource with the Glasspar Seafood Market. While supermarkets were barren, Glasspar converted its raw bar into a seafood market, providing the community with fresh seafood at better-than-supermarket prices. The Glasspar Seafood Market became such a community staple that Chef Rob decided to offer it daily through an online ordering platform on their website.
Open nightly for dinner to go beginning at 5 p.m., for lunch on Saturday from 11:30 a.m. - 4 p.m., and for brunch on Sunday from 11 a.m. - 2 p.m.
Glasspar is located at 24961 Dana Point Harbor Dr. in Dana Point.
